About this course

What the HACCP Level 2 course covers

This is an online compliance & risk course you work through in your own time, on a phone, tablet or laptop. Budget roughly 80 minutes for the 8 modules, less if the subject is already familiar. There is no clock on it, so a week off in the middle changes nothing.

Expect to cover Key Definitions, Microbiological Hazards and Controls, Chemical Hazards and Controls and Allergens and Avoiding Cross-Contamination. There are 4 further modules beyond those, listed in full on the Modules tab.

You do not need a background in compliance & risk - the first modules build it for you. It is one of 98 Compliance & Risk courses on the site. Its study time is about mid-range for the subject. The course is CPD accredited, so the time counts towards a CPD record, and your certificate is available to download as soon as you finish.

Worth knowing before you buy: If you already work in compliance & risk day to day, expect the early material to feel familiar.

Course Description

HACCP stands for Hazard Analysis and Critical Control Point. It is an internationally recognised food safety management system that is used to identify, evaluate and control hazards which are significant for food safety.

Rather than being a reactive system, HACCP is pro-active. The focus is on prevention of hazards rather than relying mainly on end-product testing.

This course will start by covering some of the key terms you will need to understand before moving on to identifying critical control points and analysing some of the key hazards. It’ll show you how to determine control points and how to avoid cross-contamination in the food chain. It will also cover some of the control measures that can be taken along with how to address a problem is a critical limit is breached.

Towards the end of the course all this will be brought together by taking you step by step through the implementation of HACCP and see how the 7 principles of HACCP are integrated into the whole process.
